BORDERING THE GEDEO ZONE DARA REGION BELONGS TO THE SIDAMA PROVINCE. THE HIGH ALTITUDE OF THE DARRA REGION CREATES AN IDEAL CLIMATE FOR GROWING EXTRAORDINARY COFFEES. A SMALL COLLECTION OF PRIVATE FARMERS BRING THE CHERRIES THEY HAVE PICKED TO THE KEBADO WASHING STATION WHERE THEY ARE SORTED AND THEN PULPED IN ORDER TO PROCESS THEM IN SPRING WATER. THEY ARE THEN FERMENTED FOR APPROXIMATELY 36HOURS DEPENDING ON WEATHER CONDITIONS. AFTER WASHING THE COFFEE, THE BEANS ARE DRIED IN PARCHMENT ON RAISED AFRICAN BEDS. AFTER ABOUT 10DAYS THE COFFEE IS DRY ENOUGH TO BE STORED IN THE LOCAL WAREHOUSE AWAITING SALE. COFFEES FROM THIS REGION ARE ALWAYS EXTREMELY COMPLEX, WITH NOTES OF CITRUS, CHERRY APRICOT AND PEACH AND BRIGHT FLORAL NOTES.
